02 - Heat olive oil in a medium skillet over medium heat until shimmering. Add finely chopped onion and sauté for 5-7 minutes until translucent and starting to caramelize.

04 - In a large mixing bowl, beat together cream cheese and sour cream until smooth.
05 - Add grated smoked Gouda, Worcestershire sauce, Dijon mustard, black pepper, and salt. Mix until thoroughly combined.
06 - Fold in sautéed onions and garlic, plus 2 tablespoons chopped chives, mixing well.
07 - Transfer mixture to an oven-safe baking dish and spread evenly.
08 - Bake for 20-25 minutes, or until hot, bubbling, and golden on top.
09 - Remove from oven and allow to cool for 10 minutes. Garnish with additional chives if desired. Serve warm with tortilla chips or fresh-cut vegetables.

# Expert Advice:

01 -
  • The smoky Gouda creates this incredible depth that regular cheese dips just cant match
  • It comes together in minutes but tastes like you spent forever on it
  • People literally hover around this dip until its gone at every gathering
02 -
  • Grating your own Gouda makes a huge difference since pre-shredded cheese has anti-caking agents that prevent that smooth melt
  • Room temperature cream cheese blends so much easier, so pull it out while you chop the onions
  • The 10 minute rest period is annoying but essential for the best texture
03 -
  • Dont rush the onion caramelization step, those sweet, golden bits are what make this dip sing
  • Use a microplane to grate the garlic if you want it to disappear completely into the dip
  • If the top browns too fast, tent with foil and keep baking until bubbly throughout
