# Expert Advice:

01 -
  • No oven required, which means you can make these while your coffee is still warm.
  • The hojicha gives you that roasted, earthy sophistication that makes people ask what you're eating.
  • They freeze beautifully, so you can batch-make them when you have five minutes and snack for weeks.
02 -
  • Dates vary wildly in moisture content, so taste the mixture before committing to water—some batches don't need it at all, and adding too much turns them into soup.
  • Those damp hands arent just helpful, theyre essential; the difference between smooth balls and a frustrating mess is literally two seconds of rinsing your hands.
03 -
  • If your dates are on the firmer side, soak them in warm water for five minutes before processing—it saves your food processor from working too hard and gives you better texture.
  • Keep these in the freezer and pull out just one or two at a time; frozen, they're like little truffles, and they thaw to perfect texture in your hand within minutes.
